There are many and various suggestions about what to start with - you're already started on the Rincewind path, so you could read the next one with him in (Sourcery, which I adore), or if you wanted to start on the Sam Vimes / guards ones, you could try Guards! Guards! (which I adore about as much as I adore Sourcery).
The first witches (Granny Weatherwax) book is Equal Rites, which has the added benefit of being next in the order TP wrote them - but isn't all that great. You can also start the witches path with Wyrd Sisters (which I adore as much as Sourcery and Guards! Guards!). *g*
My personal recommendation would be Guards! Guards!. Some of the - IMO - best books are in that path. (But I love Rincewind best of all.)
Oh, and Small Gods is pure, unadulterated awesome, but isn't in any series. It's worth reading just for its own sake.

I must read some other Lois McMasters Bujold - I've not read those, and they sound interesting.
